Blueberry Zucchini Bread

I love a well-worn recipe!

Here’s a new classic. My wife found this online at I’ve made it only a few times, but even my ever-picky daughter has requested it several times. I’ve started making 2 loaves at a time, because a single loaf goes so quickly. It’s a pretty straightforward recipe. Just make, bake and enjoy!

2 eggs lightly beaten
1/2 c vegetable oil
2 t vanilla extract
1/2 c white sugar
1/2 c brown sugar lightly packed
1 c shredded zucchini
3/4 c white flour
3/4 c whole wheat flour
1/2 t kosher salt
1/2 t baking powder
1/8 t baking soda
1 1/2 t cinnamon
1 c fresh blueberries (frozen work fine)

Preheat oven to 350° F (175° C).
Lightly grease 8.5 x 4.5 in. loaf pan.
In a large bowl, beat together eggs, oil, vanilla and sugars.
Fold in zucchini.
In a medium bowl, combine flours, salt, baking powder, baking soda, cinnamon.
Beat dry ingredients into batter until thoroughly mixed.
Fold-in blueberries.
Bake 55-65 minutes, or until a knife inserted in the center of loaf comes out clean.
Cool 20 minutes in pan, then turn-out onto wire rack to cool completely.
